- 1.5 lbs lean ground turkey
- 1 onion chopped
- 4 egg whites (or 1/2 cup Egg Beaters)
- 1 can diced tomatos with chiles (drained)
- 3/4c old-fashioned oats, uncooked
- 1 pkg Knorr vegetable soup mix
- 1/4 tsp ground black pepper
- 1 can crushed red tomatoes
- Preheat oven to 350.
- Mix everything but the crushed tomatos together and press into a meatloaf pan. you may alternatively use muffin tins to make pre-portioned mini loaves.
- Spread crushed tomatos on top.
- Bake for about 60 minutes (or 20 minutes for muffins).
