Date and Walnut Bread

Ingredients:

  • 1 cup dates, pitted & chopped
  • 1 cup walnuts, chopped & toasted
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup honey
  • 3/4 cup hottest possible water
  • 3 egg whites
  • 1 1/2 cups whole wheat pastry flour
  • 1 tsp vanilla

Directions:

Preheat oven to 375. Coat a loaf pan w/ non stick spray. In a large bowl, combine first 6 ingredients. Stir to blend. Add eggs and vanilla; slowly add flour. Blend well.

Pour batter into loaf pan. Bake in oven for 40-50 minutes (or muffins for 20 minutes) or until middle comes out clean.
