• 1/3c Rolled Oats
  • 1/3c canned pumpkin (or baked sweet potato)
  • 1/2c Egg Beaters (or 3 egg whites)
  • 1-2 tsp no-calorie sweetener (Splenda or Stevia)
  • 1 tsp vanilla
  • 1 scoop vanilla protein powder (optional)
  • cinnamon to taste


Puree in blender or with a stick blender. Spray griddle lightly with cooking spray. Pour batter on to hot griddle. Flip.

Makes ~8 3″ pancakes.
