Chicken Chili

Ingredients: olive oil (1-2 Tablespoons) 1 medium onion chopped 4-6 cloves of garlic smashed or chopped 4-6 1/2 chicken breasts cubed (about 1 1/2 lbs) 4 Tablespoons chili powder (you may adjust for spiciness)** 1 Tablespoon cumin 2 cans diced tomatos (14 oz) 1 small can tomato paste chicken broth 1 can kidney beans (rinsed) 1 can black beans (rinsed) Directions: In a large pot, add oil, onion & garlic. Over medium heat saute until onion starts to turn translucent. Add Chicken & cook until most of the pink is gone from the chicken. Add chili powder & cumin. Stir to coat. Ingredients: olive oil (1-2 Tablespoons) 3 – 4 garlic cloves chopped 1 medium onion chopped 2 green peppers chopped 2 serano peppers chopped 1.5 lbs chicken breast cut up 2 cans(14 oz ea) diced tomatos 4 cups water or chicken broth 4T chili powder lime juice (optional) cilantro (optional) monterrey jack cheese (optional) crushed tortilla chips (optional) Directions: Sweat garlic, onion, and peppers with oil in a soup pot over medium high heat. Healthy Eating: beyond poached fish and celery sticks

I love food. I love the flavor of it, texture & aroma. I love eating. I am a self-described foodie. Wikipedia defines a foodie as "A gourmet is a person with a discriminating palate and who is knowledgeable in fine food and drink. The word is a corruption of the French word gourmet, a valet in charge of the wines. It is often used as an adjective for meals of especially high quality, whose makers or preparers have used especial effort or art in presentation or cooking the meal, or for facilities equipped for preparing such meals, such as a restaurant." Wow! That is such a fantastic title for this article. I’m glad you’re still with me… I often have clients ask questions about “what is a protein?” or hearing that carbs are bad, not realizing the vast difference between the carbohydrates found in cookies versus the carbohydrates found in a tomato. This is a list of different types of foods, broken down into their MAIN category. I say “main” category because inevitably I’ll get the question about beans and or cheese: “But Elizabeth, beans & cheese have protein in them, don’t they?” Yes, they do. Ingredients: 2T olive oil juice from 3 limes 1/4 c soy sauce 4 garlic cloves, minced 2T honey 1T corriander 1T chipotle chili pepper 1T cumin Directions: Place all ingredients & desired meat into a resealable plastic bag or covered bowl. Marinate for 1 hour up to 2 days. This marinade is fantastic on chicken or fish.
