Ingredients:

cookies

  • 3 med. carrots, finely grated and packed to about 1 C
  • 1/3 C blackstrap molasses (it’s better for you than regular)
  • 2T canola oil
  • 1/4 C non-fat plain yogurt
  • 1/2 C egg beaters or 2 whites
  • 1 1/2 C whole oats
  • 1 C wheat (or other whole grain like spelt or graham) flour
  • 1/3 C unsweetened applesauce
  • 1/4 C toasted wheat germ
  • 1/4 C nonfat dry milk
  • 1/2 teas. baking powder
  • 1/2 teas. baking soda
  • 1 teas. cinnamon
  • 3/4 C raisins (optional)
  • 1/2 C chopped walnuts (optional)
  • 3 scoops vanilla protein powder (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray cookie sheets with pam;
  3. In large bowl, combine molasses, oil, yogurt and egg, and hand beat until smooth. Slowly fold in flour, oats, carrots, applesauce, wheat germ, dry milk, cinnamon, baking powder and soda until blended. Add raisins, protein powder, and walnuts if desired.
  4. Drop by slightly rounded tablespoonfulls onto cookie sheets.
  5. Bake 12-15 minutes, or until firm in the middle to the touch. Cool on racks.
